Chickpea Blondies

Secretly healthy and vegan blondies made with chickpeas, peanut butter and chocolate chips!

 

Total Time 25 minutes / Servings 10 cupcake size

Ingredients:

Cooking Spray

1 15 oz can chickpeas, rinsed and drained

1/2 C all natural peanut butter (or almond butter)

1/3 C pure maple syrup

2 tsps vanilla

1/2 tsp salt

1/4 tsp baking powder

1/4 tsp baking soda

1/3 cup vegan chocolate chips plus more for sprinkling.

Instructions:

Preheat oven to 350 degrees F and spray 8x8 inch pan with nonstick cooking spray.

In a food processor, add all ingredients except chocolate chips and process until batter is smooth.

Fold in 1/3 cup of chocolate chips, dark chocolate is my favorite because it has less sugar.

Note: Batter will be thick and super delicious, you could technically just eat it on it's own!

Spread batter evenly in prepared pan then sprinkle chocolate chips on top.

Bake for 20-25 minutes or until toothpick comes out clean and edges are a tiny bit brown. The batter may look underdone, but you don't want them to dry out!

Cool cupcake pan for 20 minutes on wire rack. Makes 10 blondies. Store covered in the fridge for up to 3-5 days.
